MVM 100 BLANC de NOIR BRUT

Wine:  Our distinctive MVM 100 Blanc de Noir Brut was crafted in centennial celebration of Margaret Victoria Mavis, celebrated Matriarch of the Hills family. 

Vineyards: In 1991 we planted a 0.75-hectare block of Pinot Noir PN52, a Burgundy clone. This vineyard was established on deep, well drained weathered granite soils located on a north-east facing slope.

The crop has historically been naturally light at between 6 and 8 tons per hectare. At these low yields, fruit quality is excellent.

The grapes were hand-picked in the cool early hours of the morning.

Winemaking: Our MVM 100 Blanc de Noir Brut was made from Pinot Noir grapes under the guidance of Matthew Krone, a celebrated Cap Classique afficionado. After gentle whole-bunch pressing, the juice was settled and racked before inoculation with yeast for the alcoholic fermentation. Thereafter, full malolactic fermentation was completed on the base wine. After malolactic fermentation, the wine was inoculated with a measured quantity of yeast and sugar before bottling under crown cork for secondary fermentation.

Carbonic gas formed as a by-product during secondary bottle fermentation, is absorbed under pressure to eventually be released as those tingling bubbles. Champagne and Cap Classique are often distinguished by time spent on the lees in secondary fermentation. Bottled in July 2022, our first batch of Blanc de Noir Brut underwent secondary fermentation and bottle maturation for 16 months.  We have just disgorged the second batch after 30 months on the lees. The balance of the vintage is still under crown cork on the lees, enhancing complexity for future disgorgement.

Tasting Notes:

           Colour – Bright pale golden hue.

           Aroma  – Notes of green apple, lime and delicate yeast welcome you on the nose.

           Palate    – An elegant balance of upfront crisp acidity and delicate fruit flavours, with a lingering dry finish.

Food: As an aperitif and a perfect match with oysters or enjoyed with many dishes from breakfast to dinner: Eggs Benedict, seared tuna, rock lobster, sushi, green salads or with dry cheeses after the meal. And of course on those special occasions!
